WHERE
There’s an amazing vegetarian restaurant in the adorable little town of Banff called Nourish Vegetarian Bistro.

MOUTH WATERING FOOD
I’m not a vegetarian by any means, but I have to say that the meatless nachos I had in Banff, Canada were to die for!
I was a bit skeptical about having about 30 ingredients on my nachos which consisted mostly of berries, avocado, 10 different types of beans, and deliciously pungent cheese, but my skepticism was soon stifled by my taste buds!
They’re called “Classic Nachos” on the dinner menu. $22 for a full plate (great for two people) and $15 for a half portion.
There are so many things on the menu that make me hungry right now even thinking about it! Like the Burito that’s made of beans, roasted carrots, onions, celery, garlic, coconut curried rice, Spanish-seasoned blueberries, strawberries, pineapples, nuts, onion crisps, and guacamole! Oh… my… god…
Hmm… if I get in my car right now, I can be in Banff in about, how many hours?!!!

DIRECTIONS
The very small bistro might be a bit difficult to find… Even though it’s located on the main drag of town [Banff Avenue], it can’t be seen from the street since it’s located in the back and upstairs of a small shopping corridor called Sundance Mall [so look for the Sundance Mall sign]. Look for a chocolate shop out front and walk through that small hallway. In the back, there will be a staircase…
